2007 Cornerstone Cellars Napa Valley Cabernet Sauvignon

A few months ago, one of my best friends gave me a bottle of Cornerstone Cellar’s 2007 Cabernet Franc from their Stepping Stone collection and I fell in love. For those interested in the review, it can be found here. Since then, I’ve acquired more wines from their collections. Lastnight I had the pleasure of tasting their 2007 Napa Valley Cabernet Sauvignon. This Cabernet is one of two distinctive Cabernets produced by Cornerstone Cellars. The other is their distinguished Howell Mountain Cabernet which will get it’s own review later on.

Cornerstone Cellars has made a name for itself by being recognized as a leader in super-premium Napa Valley and Willamette Valley wines. They also have their Stepping Stone series that is dedicated to producing outstanding wines at moderate prices.

The 2007 Napa Valley Cabernet is a true Napa Valley Cabernet that is big and defined by its boldness and complexity. It is 100% Cabernet Sauvignon. I let it decant for about two hours before enjoying it. One of the first things you will notice is its color. In the glass the wine has a deep, dark purple color. One of the many things I loved about this wine was the nose. Aromas of cherry, blackberry, and cassis were abundant. Hints of tobacco, chocolate, and spice are also present. I didn’t want to stop sniffing it. On the palate, the wine is bold and very complex. You gets layers of blackberry, cassis, chocolate, currants, black cherries, and gentle hints of spice, oak, and tobacco. This is a very smooth and silky yet full-bodied wine with a long finish. It is an absolute pleasure to sip. It is the very type of Cabernet Sauvignon that Napa Valley is known for. This wine is meant to be aged for about four to five years however can be enjoyed now providing you allow it to decant for one to two hours.

This is by far one of my favorite Napa Valley Cabernets. Cornerstone Cellars has done a beautiful job in producing such an intense, yet elegant Cabernet. They continue to impress me with their wines. This wine retails for $60. If you are a Cabernet lover, I cannot recommend this wine enough to you. It is definitely one you want to add to your collection. This wine will pair beautifully with a steak. I am excited to taste the other wines that Cornerstone Cellars has to offer.

I feel with this vintage we successfully moved to a more elegant, aromatic style and our tannin management lets the true character of the fruit show through. I was thrilled to be able to sample to sample the 2007 Napa Valley Cabernet and I am looking forward to trying the Howell Mountain cab soon and posting a blog on it.
