A few weeks ago I tasted the Cornerstone Cellars 2007 Napa Valley Cabernet Sauvignon and was blown away. Cornerstone brings it again on another level with their 2007 Howell Mountain Cabernet Sauvignon. This is a wine that is truly meant to be sipped and savored from the first drop to the last.
The wine is 100% Cabernet Sauvignon and gets its name from the mountain in which it is grown; Howell Mountain. The high elevation of the mountain contains volcanic soils which make it a prime area for growing conditions. The wine is aged for 21 months in French Oak Barrels.
The wine needs ample time to decant to be able to enjoy it fully. In the glass it has a very ink-like dark purple color; almost black. On the nose I got a lot of dark fruit including bramble berry and also some dark cherry along with cassis. I also got hints of leather, tobacco, and earthiness. The palate is very intense and has many layers including dark fruit, spices, tobacco, dark chocolate, and leather. The wine has a very lengthy, spicy finish, which I absolutely love. This cabernet is luxurious, silky, and smooth; an absolute pleasure to sip.
I enjoyed this wine tremendously. This is another gorgeous example of a signature Napa Valley Cabernet Sauvignon. It’s big, bold, and very well structured. Cornerstone Cellars did it again and produced another superb wine. This wine retails for $75. It is definitely a wine you’ll want to have for a special occasion or share with the special people in your life. The next time I have this wine, I want to pair it with a NY steak with sauteed mushrooms. For me, that would be a match made in heaven! I HIGHLY recommend this wine for anyone who loves delicious, well-made Napa Valley Cabernet. You will not be disappointed.
